Cuisine: Italian tradition in a continually reinterpreted international cuisine Atmosphere: Taste, elegance, quality These three words have defined Fausto’s athmosphere since its establishment in 1994 when Fausto Di Vora opened one of the "most well-known restaurants" in Budapest. Since its relocation in 2007, it was immediately recognized for its "trendy elegant" style and left the previous classic Italian taste in the "Osteria da Fausto" at the previous location in Dohany utca.

 

These three words have defined Fausto’s athmosphere since its establishment in 1994 when Fausto Di Vora opened one of the “most well-known restaurants” in Budapest.
Since its relocation in 2007, it was immediately recognized for its “trendy elegant” style and left the previous classic Italian taste in the “Osteria da Fausto” at the previous location in Dohany utca.
The “new” Fasuto’s gives a very pleasant feeling and the tables are not too close to one another, giving a feeling of privacy with low-volume conversation.
Formal, but with a home feeling, especially for the fantastic service and the wellprepared staff allways ready to spoil you. Probably the only place in Budapest where I usually succumb to the fantasy of allowing Fausto to defi ne my mood and my menu without the need for reading and thinking what to choose myself.
Who to take On weekdays Fausto’s offers business lunch for Ft 4,000-5,000. For those who would like
to enjoy the careful preparation and presentation of Mediterranean specialities, there is a wide selection “a la carte” or just by asking the precious advice of the staff.
The restaurant is always very busy at dinner time and advance booking is advised. At the time of our visit there where several foreigners who I felt were used to visiting the place, and some Hungarians.

What we ate

Tuna tartar on tomato and olive sauce

  • Fresh with full harmony of flavours: simply superb
    Scallops on truffle-flavoured potato cream
  • Mild and tasty: excellent
    Spaghetti alla chitarra in crab
    sauce
  • Perfectly al dente, as I like them
    Gamberoni marinated in rosmaring and pumpkin
  • Very fresh and well done
    Soft heart of chocolate cake with
    melting top of zabaglione and lenticchie
  • Very special combination of unusual flavours, a little too sweet for my taste


Wines from Friuli region that we tried:

Sauvignon Blanc Collavini 2006
Deep, brilliant straw-yellow colour. The fragrances range through vanilla, acacia honey and distinct artemisia-led florality.
The palate is round, fullbodied and harmonious, revealing long aromatic length.

Chardonay Collavini 2006
Good alcohol and excellent fixed acidity are the keys to this superb versatility. Fresh and refermented Chardonnays proffer fragrances of golden delicious
apples and crusty bread

Broy Collavini 2006
Very deep golden yellow colour. On the nose, evident notes of ripe tropical fruit fuse seamlessly with sweeter sensations of acacia honey and vanilla. The palate is
full-bodied, assertive and beautifully balanced, signing off with a leisurely aroma-rich finish.

Service and value

The bill for two complete meals and a selection of Italian wines came to Ft 40,000 plus tip, which we found not cheap but absolutely in line with the quality, service and fame of the place we visited. The waiters are very polite and extremely well-informed about the food and wine they are serving.
